A simple, make-ahead breakfast recipe using just five core ingredients. These freezer-friendly burritos are perfect for busy mornings, offering a hot, protein-packed meal that reheats quickly in the microwave.
Ingredients
- 12 large eggs
- 2 cups (200g) shredded cheese (Cheddar, Monterey Jack, or Mexican blend)
- 12 large (10-inch) flour tortillas
- ¼ cup (60ml) milk or cream
- 1 teaspoon salt
- Black pepper to taste
- Optional: 1 cup frozen hash browns (thawed and dried)
- Optional: ½ cup diced bell peppers and onions (sautéed)
- Optional: ½ cup cooked bacon or turkey sausage (crumbled)
Instructions
- Crack eggs into a mixing bowl. Add milk, salt, and pepper. Whisk until uniform and slightly frothy.
- Heat a large non-stick skillet over medium heat with a little butter or oil.
- Pour in eggs and gently push from edges to center to form soft curds. Do not overcook; remove while slightly wet as they will continue cooking from residual heat.
- Transfer eggs to a bowl and let them cool completely. (Important: Hot eggs will melt cheese and tear tortillas).
- Wrap tortillas in a damp paper towel and microwave for 20-30 seconds to make them pliable.
- Lay a warm tortilla flat. Spoon ½ cup of cooled scrambled eggs into the center.
- Top with 2-3 tablespoons of shredded cheese and any optional add-ins.
- Fold the bottom edge over the filling, tucking it in tight. Fold in the left and right sides, then roll upward tightly like a sleeping bag.
- Place rolled burrito seam-side down on parchment paper. Wrap tightly in parchment, then place in a freezer-safe bag, squeezing out excess air.
- Label with date and freeze for up to 3 months.
- To reheat: Unwrap burrito (keep parchment on), wrap in a fresh damp paper towel, and microwave on high for 1.5 to 2 minutes, flipping halfway through. Let sit for 1 minute before eating.

Ensure eggs are completely cool before assembling to prevent the tortillas from tearing and cheese from melting prematurely. Roll burritos tightly to prevent filling from leaking during reheating. For long-term storage, double-wrap in plastic or foil to prevent freezer burn. If using pre-shredded cheese, note that it contains cellulose which may prevent smooth melting.
