Description

Sticky, sweet, and garlicky chicken wings that are perfect for game day. These wings are easy to make in large batches, hold up well in a slow cooker, and taste like they took hours to prepare.


Ingredients

  • 34 pounds chicken wings (flats and drumettes)
  • 1 teaspoon baking powder
  • Salt
  • 1/2 cup honey
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 45 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon freshly grated ginger
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons butter
  • 23 green onions, sliced (for garnish)
  • 1 tablespoon toasted sesame seeds (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse wings and pat them very dry with paper towels.
  3. Toss wings with baking powder and salt. Let sit on a baking sheet for 10 minutes.
  4. Line two baking sheets with parchment paper. Arrange wings in a single layer, ensuring they are not touching.
  5. Bake for 20 minutes, then flip wings and bake for another 20-25 minutes until golden brown and crispy.
  6. While wings bake, combine honey, soy sauce, garlic, apple cider vinegar, ginger, red pepper flakes, and butter in a small saucepan over medium heat.
  7. Whisk constantly until butter melts and sauce bubbles. Simmer for 2-3 minutes until slightly thickened.
  8. Transfer hot wings to a large bowl. Pour about half the glaze over wings and toss to coat.
  9. Serve immediately, garnished with green onions and sesame seeds. Reserve remaining glaze for dipping.

Notes

For extra crispy skin, do not crowd the pan and ensure wings are bone-dry before baking. The baking powder trick helps draw out moisture. If tailgating, keep wings warm in a slow cooker on the ‘warm’ setting with the remaining glaze.
