Football Sunday Peanut Butter Buckeye Balls: Best 3-Ingredient Recipe

  • Author: Karina
  • Total Time: 1 hour 30 minutes
  • Yield: 24 servings 1x

Description

These no-bake peanut butter buckeye balls feature a creamy, firm peanut butter center dipped in a snappy dark chocolate shell. This foolproof recipe uses just a few pantry staples and requires no baking, making it the perfect make-ahead dessert for game day or parties.

Ingredients

Scale
  • 8 oz (225g) unsalted cream cheese, softened to room temperature
  • 1 cup (250g) creamy peanut butter (standard brand like Jif or Skippy), room temperature
  • 2 cups (240g) confectioners’ sugar (powdered sugar), sifted
  • 12 oz (340g) dark chocolate chips (60-70% cacao)
  • 1 tablespoon (15ml) coconut oil (refined)
  • 1 pinch salt
  • Fine sea salt flakes (optional, for garnish)

Instructions

  1. Prep the cream cheese by taking it out of the fridge at least an hour before starting to ensure it is fully softened.
  2. In a large mixing bowl, beat the softened cream cheese until smooth. Add the creamy peanut butter and mix until combined.
  3. Gradually add the confectioners’ sugar and mix on low speed until incorporated. Increase to medium-high and beat for 2 full minutes until the mixture is light, fluffy, and holds its shape.
  4. Line two baking sheets with parchment paper. Using a 1-tablespoon cookie scoop, portion the mixture onto the sheets. Roll each portion between cool palms to form smooth balls. If the mixture sticks, wet hands slightly with cold water.
  5. Place the baking sheets in the freezer for at least 30 minutes, or until the balls are rock hard.
  6. While the balls chill, melt the dark chocolate chips and coconut oil in a heatproof bowl using the microwave in 30-second intervals, stirring between each. Stop when a few small chips remain and stir vigorously until smooth and glossy.
  7. Remove one frozen ball from the freezer. Dip it completely into the melted chocolate using a fork, tapping off excess chocolate.
  8. Place the dipped buckeye onto the parchment-lined baking sheet. Immediately sprinkle with a tiny pinch of sea salt flakes if desired.
  9. Place the sheet in the fridge for 15 minutes to set the chocolate. Repeat with remaining balls, working in batches to keep the chocolate and balls cold.
  10. Store finished buckeyes in an airtight container in the refrigerator for up to 2 weeks.

Notes

Use standard creamy peanut butter, not natural peanut butter, to prevent the mixture from becoming greasy. Ensure the cream cheese is fully softened to avoid lumps. The freezing step is crucial to prevent the peanut butter center from squishing out during dipping. Work in batches to keep the chocolate at the right consistency.
