Description

Ingredients

  • 1 pound frozen beef or pork meatballs (fully cooked)
  • 1/2 cup honey
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 45 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon black pepper, freshly ground
  • 1 teaspoon fresh ginger, grated (optional)
  • 1 teaspoon sesame oil (optional)
  • 1 tablespoon cornstarch mixed with 1 tablespoon water (optional, for thickening)

Instructions

  1. In a small bowl, whisk together the honey, soy sauce, minced garlic, apple cider vinegar, red pepper flakes, and black pepper until the honey is mostly dissolved.
  2. Dump the frozen meatballs directly into the slow cooker. Do not thaw them.
  3. Pour the sauce mixture over the meatballs and gently toss to coat them evenly.
  4. Cover and cook on low for 3-4 hours (or on high for 2 hours).
  5. If a thicker sauce is desired, stir in the cornstarch slurry, turn the slow cooker to high, and cook for an additional 15-20 minutes.
  6. Serve warm, garnished with sesame seeds and green onions if desired.

Notes

Do not thaw the meatballs before cooking to prevent them from falling apart. Use good quality honey for the best flavor. The sauce can be mixed ahead of time and stored in the fridge for up to 2 days. Keep the slow cooker on the ‘warm’ setting during parties to maintain temperature without overcooking.
