Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter or non-stick spray.
  2. In a large bowl, toss diced pears with brown sugar, minced fresh ginger, cinnamon, lemon juice, and cornstarch. Let sit for 5 minutes.
  3. Spread the pear mixture evenly into the prepared baking dish.
  4. In a medium bowl, whisk together oats, flour, salt, and granulated sugar.
  5. Add cold cubed butter and ginger molasses to the dry ingredients. Use a fork or pastry cutter to mix until the mixture resembles coarse crumbs with pea-sized clumps.
  6. Sprinkle the oat topping evenly over the pears without pressing down.
  7. Bake for 30-35 minutes until the topping is golden brown and the filling is bubbling. Tent with foil if browning too quickly.
  8. Cool in the pan for at least 15 minutes before cutting into 12 squares.

Use firm Bosc pears to prevent mushiness. Cold butter is crucial for a flaky crumble texture. Do not skip the cornstarch to avoid a soggy bottom.
