Ingredients
Scale
- 3 medium Bosc pears, peeled and diced (about 4 cups)
- ½ cup light brown sugar
- 1 tablespoon fresh ginger, minced
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1½ cups old-fashioned rolled oats
- 1 cup all-purpose flour
- ½ cup unsalted butter, cold and cubed
- ½ cup granulated sugar
- 2 tablespoons ginger molasses
- ½ teaspoon salt
- Optional: ½ cup chopped walnuts
- Optional: ¼ teaspoon cardamom
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter or non-stick spray.
- In a large bowl, toss diced pears with brown sugar, minced fresh ginger, cinnamon, lemon juice, and cornstarch. Let sit for 5 minutes.
- Spread the pear mixture evenly into the prepared baking dish.
- In a medium bowl, whisk together oats, flour, salt, and granulated sugar.
- Add cold cubed butter and ginger molasses to the dry ingredients. Use a fork or pastry cutter to mix until the mixture resembles coarse crumbs with pea-sized clumps.
- Sprinkle the oat topping evenly over the pears without pressing down.
- Bake for 30-35 minutes until the topping is golden brown and the filling is bubbling. Tent with foil if browning too quickly.
- Cool in the pan for at least 15 minutes before cutting into 12 squares.
Notes
Use firm Bosc pears to prevent mushiness. Cold butter is crucial for a flaky crumble texture. Do not skip the cornstarch to avoid a soggy bottom. Let bars cool completely before cutting to ensure they hold their shape. Can be stored at room temperature for 2 days, refrigerated for 5 days, or frozen for 3 months.
