A quick, one-pan weeknight dinner featuring caramelized chicken thighs and root vegetables tossed in a sweet and tangy maple Dijon glaze. Perfect for busy evenings with minimal cleanup.

- 2 lbs chicken thighs (bone-in, skin-on preferred)
- 3 tablespoons Dijon mustard (grainy recommended)
- 3 tablespoons real maple syrup
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 2 tablespoons apple cider
- 1 teaspoon freshly cracked black pepper
- 2 large sweet potatoes, cubed
- 1 medium butternut squash, cubed
- 1 large red onion, wedged
- 1 red bell pepper, chopped
- 1 head broccoli, cut into small florets
Instructions
- Preheat oven to 400°F (200°C). Line a large half-sheet pan (18×13 inches) with parchment paper or aluminum foil.
- In a small bowl, whisk together Dijon mustard, maple syrup, olive oil, minced garlic, soy sauce, apple cider, and black pepper until combined.
- Place cubed sweet potatoes, squash, onion, bell pepper, and broccoli on the sheet pan. Drizzle half of the sauce over the veggies and toss to coat evenly. Spread in a single layer.
- Pat chicken thighs dry with paper towels. Place chicken on top of the vegetables. Drizzle the remaining sauce over the chicken and rub it in to coat.
- Roast for 25-30 minutes. Halfway through (around 15 minutes), flip the chicken pieces. Optionally brush with extra sauce for crispiness.
- Chicken is done when internal temperature reaches 165°F (74°C) and edges are caramelized.
- Remove from oven and let rest for 5 minutes before serving. Garnish with fresh parsley if desired.
Notes
Do not crowd the pan to ensure veggies roast instead of steam. Pat chicken dry before adding sauce for better browning. Use real maple syrup, not pancake syrup, to prevent burning. Chicken thighs are more forgiving than breasts; if using breasts, reduce cook time by 5 minutes.
