Description

A rich and creamy dessert combining a tangy New York cheesecake base with a chewy, nutty pecan pie topping and a homemade chocolate-caramel drizzle.

  • 6 tablespoons (85g) unsalted butter, melted
  • 2 tablespoons (25g) granulated sugar
  • Pinch of salt
  • 16 oz (450g) full-fat cream cheese, softened
  • ½ cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons (15g) all-purpose flour
  • ½ cup (120ml) light corn syrup
  • ½ cup (110g) packed brown sugar
  • 4 tablespoons (55g) unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups (170g) pecan halves
  • ½ cup (120ml) heavy cream
  • ½ cup (90g) semi-sweet chocolate chips
  • 1 tablespoon (15g) unsalted butter
  • Pinch of flaky sea salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper.
  2. Mix graham cracker crumbs, melted butter, sugar, and salt. Press firmly into the bottom of the pan.
  3. Bake crust for 8 minutes, then remove and let cool.
  4. Beat cream cheese and sugar until smooth. Add eggs one at a time on low speed, then stir in vanilla and flour.
  5. Pour cheesecake mixture over the cooled crust and smooth out.
  6. Whisk together corn syrup, brown sugar, softened butter, egg, and vanilla. Stir in pecans.
  7. Pour pecan mixture over the cheesecake layer and spread gently.
  8. Bake at 350°F (175°C) for 45-50 minutes until edges are set and center jiggles slightly.
  9. Cool in pan on a wire rack for 1 hour, then refrigerate for at least 4 hours or overnight.
  10. Heat heavy cream until simmering, pour over chocolate chips and butter, let sit 2 minutes, then stir until smooth.
  11. Drizzle chocolate caramel over chilled bars and sprinkle with flaky sea salt.
  12. Lift bars out using parchment overhang and cut into squares.

Notes

Ensure all dairy ingredients are at room temperature to prevent lumps. Do not overmix the batter after adding eggs to avoid cracking. Toasting pecans enhances flavor. Bars must be chilled completely before slicing to set properly.
