Description

  • 2 pounds Brussels sprouts, trimmed and halved
  • 810 slices thick-cut bacon
  • 3 tablespoons real maple syrup
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 3 cloves garlic, minced
  • 1 teaspoon apple cider vinegar
  • Kosher salt and freshly cracked black pepper
  • Optional: Chopped pecans or walnuts
  • Optional: Fresh thyme leaves

Instructions

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
  2. Wash and thoroughly dry the Brussels sprouts. Trim the tough stems and halve them lengthwise.
  3. Cook the bacon in a large skillet over medium heat until crispy. Remove to a paper towel-lined plate to drain, then crumble into small pieces. Reserve 1 tablespoon of bacon fat in the pan if desired, or discard.
  4. In a small bowl, whisk together the olive oil (or reserved bacon fat), maple syrup, Dijon mustard, minced garlic, apple cider vinegar, salt, and pepper to create the glaze.
  5. Toss the halved sprouts in the glaze until evenly coated.
  6. Spread the sprouts in a single layer on the prepared baking sheet, ensuring they are not touching.
  7. Roast for 15 minutes, then remove from the oven and flip the sprouts over.
  8. Return to the oven and roast for another 10-15 minutes, or until edges are dark brown and crispy and centers are tender.
  9. Remove from oven and immediately sprinkle with crumbled crispy bacon. Toss gently and serve hot.

Notes

Ensure sprouts are completely dry before roasting to prevent steaming. Do not overcrowd the pan; use two sheets if necessary. For extra crunch, add toasted pecans or walnuts in the last 5 minutes of roasting. Real maple syrup is essential for proper caramelization.
