Ingredients
- 6 medium Honeycrisp apples (about 2 lbs / 900g), peeled and sliced
- 1 tablespoon lemon juice
- 3 tablespoons honey
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- 1 cup old-fashioned rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/4 cup granulated sugar
- 1/2 cup cold unsalted butter, cubed
- 1/4 teaspoon sea salt
- Optional: 1/2 cup chopped walnuts or pecans
- Optional: 1/4 cup chopped dark chocolate
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or non-stick spray.
- Peel, core, and slice apples into 1/4-inch thick slices. Toss with lemon juice, honey, cinnamon, nutmeg, vanilla, and cornstarch until coated. Let sit for 5-10 minutes.
- In a separate bowl, whisk together oats, flour, brown sugar, granulated sugar, and salt. Add cold cubed butter and work it in with a fork or fingers until the mixture is crumbly with pea-sized clumps. Stir in optional nuts or chocolate if using.
- Pour the spiced apples into the prepared baking dish and spread evenly. Sprinkle the oat streusel evenly over the top without pressing down.
- Bake for 45-55 minutes until the topping is golden brown and juices are bubbling. Tent with foil if topping browns too quickly.
- Let cool for at least 15-20 minutes before serving to allow the filling to set.

Use cold butter for a crunchy topping. Let the crisp cool completely before slicing to ensure the filling sets. Can be made ahead and refrigerated for up to 5 days.
