Ingredients

  • 3/4 cup granulated sugar

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder

  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1 cup confectioners’ sugar (for glaze)
  • 12 tablespoons milk (for glaze)
  • 1/4 teaspoon cinnamon (for glaze)
  • 1/4 cup granulated sugar (for coating)
  • 1/2 teaspoon cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Generously grease a donut pan with cooking spray or butter.
  2. In a medium mixing bowl, whisk together melted butter, granulated sugar, egg, and vanilla extract until smooth and slightly glossy.
  3. Pour in the apple cider and whisk to combine. The batter will be thin.
  4. Add flour, baking powder, baking soda, salt, and cinnamon to the wet ingredients. Fold gently with a spatula until just combined; do not overmix.
  5. Scoop batter into the donut cavities, filling each about 3/4 full.
  6. Bake for 12-14 minutes until a toothpick inserted comes out clean and edges are golden brown.
  7. Cool in the pan for 5 minutes, then transfer to a wire rack.
  8. Whisk confectioners’ sugar, milk, and 1/4 teaspoon cinnamon to make the glaze. Dip or drizzle over warm donuts.
  9. Optional: Roll glazed donuts in a mixture of granulated sugar and cinnamon while still tacky.

Notes

For intense flavor, reduce 1 cup of cider to 1/2 cup before using. Do not overmix the batter to avoid tough donuts. Store in an airtight container at room temperature for up to 3 days. Freeze unglazed donuts for up to 3 months.
