Description

A festive, tart, and spicy fall cranberry ginger mocktail made with fresh rosemary and lime. This simple, gluten-free, and vegan-friendly drink is perfect for holiday gatherings and requires no cooking.


Ingredients

  • 4 cups (960ml) 100% cranberry juice
  • 1 large knob of fresh ginger (about 3 inches), peeled and grated
  • 2 medium limes (juiced and zested)
  • 46 sprigs fresh rosemary
  • 23 tablespoons honey or maple syrup
  • 2 cups (480ml) sparkling water or club soda
  • Ice cubes

Instructions

  1. Wash limes and ginger. Peel ginger if necessary and grate it using a microplane until you have about 2 tablespoons of pulp. Juice the limes to get about 1/4 cup of juice and zest one lime.
  2. Place 2-3 sprigs of fresh rosemary in the bottom of a large pitcher. Gently press and twist the rosemary with a muddler or wooden spoon to bruise the leaves and release essential oils.
  3. Pour the cranberry juice into the pitcher with the rosemary. Add the grated ginger, lime zest, and lime juice. Stir well to combine.
  4. Add honey or maple syrup. If using honey, whisk vigorously or microwave briefly to thin it out, then stir until fully dissolved.
  5. Taste the mixture and adjust sweetness or tartness by adding more honey or lime juice as needed. The mixture should taste slightly stronger than desired as it will be diluted with ice and soda.
  6. Just before serving, add the sparkling water or club soda and stir gently to preserve carbonation.
  7. Fill glasses with ice, pour the mocktail over the ice, and garnish with a fresh rosemary sprig and a thin slice of lime. Serve immediately.

Notes

For best results, chill the cranberry juice beforehand. If making ahead, store the base mixture (without sparkling water) in the refrigerator for up to 3 days. Add sparkling water and ice only right before serving to maintain carbonation. For a warmer version, heat the base mixture without the soda.
