Ingredients
Scale
- 1 wheel Brie cheese (about 8–9 oz / 250g)
- 1/2 cup heavy whipping cream
- 3 tablespoons raw honey
- 1 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 1 box assorted crackers (water crackers, seeded crackers, rye crisps)
- 2–3 types fresh fruit (Honeycrisp apples, Bosc pears, grapes)
- 1 cup mixed roasted nuts (walnuts, pecans, almonds)
- 6 oz salami or prosciutto
- 1/2 cup dark chocolate chunks
- Extra drizzle honey for serving
- Optional: 1/2 cup fig jam or apricot jam
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Let the Brie come to room temperature for about 15 minutes.
- Chill a mixing bowl and whisk attachment in the freezer for 10 minutes.
- Combine heavy cream, honey, cinnamon, vanilla, and salt in the chilled bowl.
- Whip on medium-high speed until stiff peaks form, being careful not to over-whip.
- Place the Brie wheel on the prepared baking sheet.
- Spread the cinnamon honey whipped cream evenly over the top of the Brie, about 1/2 inch thick.
- Bake for 15-20 minutes until the cream is golden brown and bubbly, and the Brie is soft inside.
- Remove from oven and let cool for 2-3 minutes.
- While Brie bakes, arrange crackers, meats, nuts, fruit, and chocolate on a large charcuterie board.
- Place the warm Brie in the center of the board.
- Serve immediately with extra honey and jams on the side.
Notes
Chill your mixing bowl and whisk for better whipped cream texture. Ensure the Brie is at room temperature before baking for even cooking. This dish is best served warm and fresh.
