Description

A comforting, set-it-and-forget-it breakfast recipe featuring rolled oats, firm apples, and a crunchy pecan topping. This easy 5-ingredient base yields a moist, chewy interior with a caramelized crust, perfect for chilly mornings.

Ingredients

Scale
  • 3 cups old-fashioned rolled oats
  • 2 medium apples (firm variety like Granny Smith or Honeycrisp), peeled and diced
  • 1/2 cup real maple syrup
  • 1 cup apple cider
  • 2 large eggs
  • 1 cup milk (whole, almond, or oat)
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans
  • 2 tablespoons brown sugar (optional, for topping)
  • 2 tablespoons melted butter (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9 inch baking dish with butter or cooking spray.
  2. Peel and dice apples into 1/2-inch cubes. Toss with oats in a large mixing bowl.
  3. In a separate bowl, whisk together eggs, maple syrup, apple cider, milk, 2 tablespoons melted butter, and vanilla extract until smooth.
  4. Pour wet ingredients over the oats and apples. Stir well to coat. Let the mixture sit for 5 minutes to allow oats to hydrate.
  5. In a small bowl, mix chopped pecans, 2 tablespoons melted butter, and brown sugar (if using) to create the topping.
  6. Pour the oat mixture into the prepared baking dish and spread evenly. Sprinkle the pecan topping over the top and press gently to adhere.
  7. Bake for 45-50 minutes, or until the top is golden brown, edges are bubbly, and the center is set.
  8. Let cool for at least 10 minutes before slicing into squares to allow it to set.
  9. Serve warm with yogurt, cream, or extra maple syrup.

Notes

Use firm apples like Granny Smith or Honeycrisp to prevent mushiness. Let the oat mixture rest for 5 minutes before baking to ensure proper texture. If the top browns too quickly, cover loosely with foil for the last 10 minutes. For storage, cool completely before refrigerating in an airtight container for up to 5 days or freezing for up to 3 months.
