Description

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1/2 cup chicken broth (low-sodium)
  • 1/2 cup sun-dried tomatoes packed in oil, drained
  • 4 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups fresh baby spinach, packed
  • Salt and black pepper to taste

Instructions

  1. Season chicken breasts or thighs lightly with salt and pepper on both sides.
  2. Place chicken in the bottom of a 6-quart slow cooker.
  3. In a small bowl, whisk together chicken broth, minced garlic, Italian seasoning, and red pepper flakes. Pour over the chicken.
  4. Drain sun-dried tomatoes and chop roughly if large. Scatter them over the chicken.
  5. Cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours until chicken is fork-tender.
  6. Remove chicken from the pot and set aside on a plate.
  7. Pour cooking liquid into a measuring cup and skim off excess fat if desired.
  8. Return liquid to the slow cooker. Turn heat to HIGH (or keep on LOW).
  9. Stir in heavy cream and grated Parmesan cheese until melted and smooth.
  10. Stir in fresh spinach and let it wilt for about a minute.
  11. Shred or chop the cooked chicken and return it to the pot, stirring to combine with the sauce.
  12. Taste and adjust salt and pepper as needed. Serve warm over mashed potatoes, egg noodles, or crusty bread.

Notes

For best results, grate your own Parmesan cheese to prevent a grainy sauce. Add spinach at the very end to keep it vibrant. If using frozen spinach, thaw and squeeze out all water. This recipe does not freeze well due to the dairy; store leftovers in the fridge for up to 4 days. Reheat gently in a skillet with a splash of milk or cream.
