Description

  • 4 bone-in or boneless pork chops (about 1-inch thick / 600g)
  • 1 cup buttermilk (240ml)
  • 1 cup panko breadcrumbs (100g)
  • ½ cup all-purpose flour (60g)
  • 2 large eggs, beaten
  • Salt and black pepper (generous amounts)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ cup honey (60ml)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup (optional)
  • ½ teaspoon smoked paprika
  • 1 tablespoon butter (for glaze)
  • 2 tablespoons butter, melted (for brushing)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
  2. Pat pork chops dry with paper towels. Place in a bowl, pour buttermilk over them, and soak for at least 10 minutes (or up to 2 hours in the fridge) to tenderize.
  3. Set up a dredging station with three shallow bowls: one with flour mixed with salt, pepper, garlic powder, and onion powder; one with beaten eggs; and one with panko breadcrumbs.
  4. Remove chops from buttermilk, letting excess drip off. Dredge each chop in the flour mixture, then dip into the egg wash, and finally press firmly into the panko breadcrumbs to coat evenly.
  5. Place breaded chops on the prepared baking sheet. Brush the tops generously with melted butter.
  6. Bake for 15-18 minutes, flipping halfway through, until internal temperature reaches 145°F (63°C).
  7. While chops bake, make the glaze: In a small saucepan, combine honey, Dijon mustard, apple cider vinegar, maple syrup, and smoked paprika. Heat over medium-low heat, stirring constantly, until smooth and slightly thickened (2-3 minutes). Remove from heat and stir in 1 tablespoon of butter.
  8. Remove chops from oven. Brush generously with the honey mustard glaze. Return to oven for 2-3 minutes to set the glaze until bubbly.
  9. Remove from oven and let rest for 5 minutes to redistribute juices. Garnish with fresh chopped parsley and serve immediately.

Notes

Bone-in chops stay juicier; if using boneless, reduce baking time by 2-3 minutes. Panko breadcrumbs are essential for crispiness. Do not glaze too early as the sugar in honey burns easily. Resting the meat for 5 minutes is crucial for juiciness. For a spicy version, add chili flakes to the glaze.
