  • 1 teaspoon dried thyme or parsley
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 68 slices bacon, cooked and crumbled (optional)
  • 1 cup diced ham (optional)
  • 1 medium bell pepper, diced (optional)
  • 12 teaspoons hot sauce (optional)
  • 23 stalks green onions, sliced (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish with butter or cooking spray.
  2. Break up frozen hash browns into loose shreds. Toss with 1 tablespoon of the melted butter in a large bowl.
  3. Optional: Sauté diced onions in remaining 1 tablespoon butter until soft. Add bell peppers if using, and cook until tender. Set aside.
  4. In a large mixing bowl, whisk eggs, cream/milk, salt, pepper, garlic powder, and dried herbs until uniform and frothy.
  5. Spread hash browns evenly in the prepared baking dish. Scatter onions/peppers and bacon/ham over the top. Sprinkle cheese evenly.
  6. Pour egg mixture over everything. Use a spatula to gently press down, ensuring eggs soak into the hash browns.
  7. Bake for 30-35 minutes until top is golden brown, edges are bubbly, and a knife inserted in the center comes out clean.
  8. Let rest for 5 minutes before cutting into squares and serving with green onions.
