A rustic, easy-to-make Southern peach cobbler featuring juicy, caramelized peaches topped with a flaky, buttery biscuit crust. This forgiving dessert is perfect for using peak-season fruit and comes together in under an hour.

- 6–8 medium fresh peaches, peeled and sliced (about 6 cups)
- ½ cup granulated sugar
- ¼ cup light brown sugar
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup cold unsalted butter, cubed
- ¼ cup whole milk
- 2 tablespoons butter, melted (for drizzling)
Instructions
- Preheat oven to 375°F (190°C).
- Peel and slice the peaches. If using fresh peaches, score an X on the bottom, blanch in boiling water for 30-45 seconds, plunge into ice water, then peel and slice into half-inch wedges. If using frozen, thaw and drain excess liquid.
- In a large mixing bowl, combine sliced peaches, granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, cornstarch, and vanilla extract. Toss to coat evenly.
- Pour the peach mixture into a 9×9 inch baking dish and spread out evenly.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Add the cold, cubed butter to the flour mixture. Use a fork or pastry blender to cut the butter in until the mixture resembles coarse crumbs with pea-sized butter pieces.
- Pour in the milk and stir gently with a wooden spoon until the dough just comes together. Do not overmix or knead.
- Drop spoonfuls of the biscuit dough over the peach filling, leaving gaps for bubbling.
- Drizzle the melted butter evenly over the top of the dough.
- Bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbling vigorously. Cover edges with foil if they brown too quickly.
- Let cool for 10 minutes before serving to allow the filling to thicken.
Notes
Keep the butter cold for a flaky topping. Do not overmix the dough. Let the cobbler cool for 10 minutes to thicken the filling. Can be made with frozen peaches if fresh are unavailable. Store leftovers in an airtight container for up to 3 days.
