  • 1 to 1.5 cups (120-180g) ice
  • 23 ounces (60-90ml) white rum
  • 24 tablespoons (30-60ml) 100% pure pineapple juice
  • 1 teaspoon (5ml) lime juice
  • Optional: Toasted shredded coconut for garnish
  • Optional: Maraschino cherries for garnish
  • Optional: Pineapple wedge for garnish
  • Optional: 1 tablespoon coconut cream for extra richness

Instructions

  1. Prep ingredients: If using fresh pineapple, peel, core, and chop into 1-inch chunks. Shake the coconut milk can vigorously to combine.
  2. Load the blender: Add pineapple chunks first, followed by coconut milk, rum, pineapple juice, and lime juice.
  3. Add ice: Add 1 cup of ice if using frozen pineapple, or 1.5 cups if using fresh pineapple.
  4. Blend: Start on low speed to break up ice and fruit, then increase to high speed. Blend for 30-60 seconds until completely smooth and slushie-like.
  5. Taste and adjust: Taste the mixture. Add more lime juice if too sweet, or more pineapple juice/water if too thick.
  6. Serve: Pour into chilled glasses. Garnish with a pineapple wedge and toasted coconut flakes. Serve immediately with a thick straw.

Notes

For the best texture, use frozen pineapple chunks instead of fresh to avoid watering down the drink. Always shake the can of coconut milk before opening. Chill glasses in the freezer for 10 minutes before serving to keep the drink cold longer. If the drink is too thick, add liquid; if too thin, add more ice or frozen pineapple.
