A thick, rich, and smoky beef chili made without beans, ready in just 30 minutes. This one-pot meal is perfect for busy weeknights and uses pantry-friendly ingredients for maximum flavor with minimal cleanup.

- 1.5 lbs (700g) ground beef (80/20 fat ratio)
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 2 medium carrots, diced
- 1 red bell pepper, diced
- 2 cans (28oz each) canned diced tomatoes
- 2 tablespoons tomato paste
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 cup (240ml) low-sodium beef broth
- 1 tablespoon olive oil
- Salt and black pepper to taste
Instructions
- Prep ingredients by chopping the onion, mincing garlic, and dicing carrots and bell pepper.
- Heat olive oil in a Dutch oven or large pot over medium-high heat. Add ground beef and break it up with a wooden spoon, cooking until browned and crumbly (5-7 minutes). Drain excess grease if necessary.
- Add diced onions, carrots, and bell peppers to the beef. Sauté for 5 minutes until onions are translucent and carrots begin to soften. Add minced garlic and cook for 1 more minute.
- Stir in chili powder, cumin, smoked paprika, and a pinch of salt and pepper. Cook for 1 minute to bloom the spices.
- Pour in canned tomatoes (with juices), tomato paste, and beef broth. Stir to scrape up browned bits from the bottom of the pot.
- Bring to a boil, then reduce heat to low. Cover partially and simmer for 15-20 minutes until the sauce thickens and carrots are tender.
- Taste and adjust seasoning with salt, pepper, or a pinch of sugar if needed. If too thick, add a splash of water or broth.
- Serve hot, topped with shredded cheddar cheese, sour cream, and fresh cilantro.
Notes
For extra depth, fry the tomato paste in the oil with the beef for 2 minutes before adding veggies. This chili tastes even better the next day. It can be made dairy-free by skipping cheese and sour cream, or leaner by using 93% lean ground beef.
