Description

A thick, rich, and smoky beef chili made without beans, ready in just 30 minutes. This one-pot meal is perfect for busy weeknights and uses pantry-friendly ingredients for maximum flavor with minimal cleanup.

  • 1.5 lbs (700g) ground beef (80/20 fat ratio)
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 red bell pepper, diced
  • 2 cans (28oz each) canned diced tomatoes
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 cup (240ml) low-sodium beef broth
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. Prep ingredients by chopping the onion, mincing garlic, and dicing carrots and bell pepper.
  2. Heat olive oil in a Dutch oven or large pot over medium-high heat. Add ground beef and break it up with a wooden spoon, cooking until browned and crumbly (5-7 minutes). Drain excess grease if necessary.
  3. Add diced onions, carrots, and bell peppers to the beef. Sauté for 5 minutes until onions are translucent and carrots begin to soften. Add minced garlic and cook for 1 more minute.
  4. Stir in chili powder, cumin, smoked paprika, and a pinch of salt and pepper. Cook for 1 minute to bloom the spices.
  5. Pour in canned tomatoes (with juices), tomato paste, and beef broth. Stir to scrape up browned bits from the bottom of the pot.
  6. Bring to a boil, then reduce heat to low. Cover partially and simmer for 15-20 minutes until the sauce thickens and carrots are tender.
  7. Taste and adjust seasoning with salt, pepper, or a pinch of sugar if needed. If too thick, add a splash of water or broth.
  8. Serve hot, topped with shredded cheddar cheese, sour cream, and fresh cilantro.

Notes

For extra depth, fry the tomato paste in the oil with the beef for 2 minutes before adding veggies. This chili tastes even better the next day. It can be made dairy-free by skipping cheese and sour cream, or leaner by using 93% lean ground beef.
