  • 2 cups frozen corn (about 300g)
  • 8 oz cream cheese, softened (225g)
  • 1/2 cup chicken broth (120ml)
  • 1 cup crumbled cotija cheese (100g)
  • 1/2 cup mayonnaise (120g)
  • 12 teaspoons minced chipotle peppers in adobo sauce
  • 1 large lime (zest and juice)
  • 1/4 cup chopped fresh cilantro
  • 23 green onions, sliced
  • 1 cup crushed tortilla chips
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. Shred the chicken and drain excess water from the frozen corn.
  3. In a large mixing bowl, whisk the softened cream cheese and chicken broth until smooth.
  4. Add mayonnaise, lime zest, lime juice, and minced chipotle peppers to the bowl; mix until the sauce is creamy and uniform.
  5. Stir in the shredded chicken and frozen corn until everything is well coated.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. Sprinkle half of the cotija cheese over the top.
  8. Sprinkle crushed tortilla chips evenly over the casserole, then top with the remaining cotija cheese.
  9. Bake for 20-25 minutes until the top is golden brown and edges are bubbling. Cover loosely with foil if browning too quickly.
  10. Remove from oven and let rest for 5 minutes before garnishing with cilantro and green onions. Serve warm.

Notes

Ensure cream cheese is fully softened to avoid lumps. Use aged cotija for authentic texture. If the top browns too fast, cover with foil. The casserole can be assembled up to 24 hours ahead and refrigerated before baking. Do not freeze as the texture may become grainy.
