  • 1/2 cup (120g) sour cream
  • 10 oz (280g) frozen spinach, thawed and squeezed dry
  • 14 oz (400g) canned artichoke hearts, drained and chopped
  • 4 cloves garlic, minced
  • 1.5 cups (170g) shredded low-moisture mozzarella cheese
  • 1/2 cup (50g) grated parmesan cheese
  • 1/2 cup (60g) crumbled feta cheese (optional)
  • 1/2 cup (45g) panko breadcrumbs
  • 2 tablespoons butter, melted
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Thaw frozen spinach and squeeze out all excess moisture using a colander and your hands or a clean kitchen towel.
  3. In a large mixing bowl, combine softened cream cheese, mayonnaise, and sour cream. Mix until smooth. If lumps remain, microwave for 15-20 seconds and mix again.
  4. Add minced garlic, drained spinach, chopped artichokes, mozzarella, parmesan, and feta to the bowl. Stir until evenly distributed.
  5. In a small skillet, melt butter over medium heat. Add panko breadcrumbs, garlic powder, and Italian seasoning. Stir constantly for 2-3 minutes until golden brown and nutty. Set aside.
  6. Transfer the dip mixture to a 9×9 inch baking dish and smooth the top.
  7. Sprinkle the toasted panko mixture evenly over the top of the dip.
  8. Bake for 20-25 minutes until the center is bubbly and the top is golden and crispy. If the top browns too quickly, cover loosely with foil for the last 5-10 minutes.
  9. Let the dip cool for 5-10 minutes before serving to allow it to set slightly.
