  • 3 cups cooked chicken, shredded (about 450g)
  • 8 oz full-fat block-style cream cheese, softened
  • ½ cup hot sauce (such as Frank’s RedHot)
  • 1 packet (1 oz) ranch seasoning mix
  • 1 ½ cups shredded cheese (mix of sharp cheddar and mozzarella), divided
  • ½ cup ranch dressing
  • Cool Ranch tortilla chips, for serving
  • Optional garnishes: sliced green onions, blue cheese crumbles, extra hot sauce

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Shred the cooked chicken and set aside.
  3. Cut the softened cream cheese into small cubes.
  4. In a large mixing bowl, combine the cream cheese, ranch dressing, and hot sauce. Beat with an electric hand mixer until smooth and creamy.
  5. Add the ranch seasoning packet and 1 cup of the shredded cheese. Mix until just combined.
  6. Gently fold in the shredded chicken until evenly coated.
  7. Spread the mixture evenly into a 9×9 inch baking dish.
  8. Sprinkle the remaining ½ cup of shredded cheese evenly over the top.
  9. Bake for 10-12 minutes, or until the dip is hot and bubbly and the cheese is melted and slightly browned.
  10. Remove from oven and let cool for 2-3 minutes.
  11. Garnish with sliced green onions and optional blue cheese crumbles. Serve immediately with tortilla chips.

Notes

For best results, use full-fat block cream cheese and shred your own cheese to ensure smooth melting. If making ahead, mix up to 24 hours in advance and refrigerate; add 2-3 minutes to baking time if baking from cold. This dip does not freeze well due to dairy separation.
