- 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch strips
- 2 tablespoons vegetable oil
- 2 tablespoons fajita seasoning
- Salt and black pepper to taste
- 1 large red bell pepper, sliced
- 1 large green bell pepper, sliced
- 1 large yellow onion, sliced into half-moons
- 2 tablespoons fresh lime juice
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1 cup corn kernels (optional)
- 1 jalapeño, sliced (optional)
Instructions
- Preheat oven to 425°F (220°C). Line a large baking sheet with aluminum foil or parchment paper.
- Pat chicken breasts dry with paper towels and slice into 1-inch strips. Place in a large mixing bowl.
- Slice bell peppers and onions into strips similar in width to the chicken. Add to the bowl with the chicken.
- Drizzle vegetable oil over the chicken and veggies. Sprinkle with fajita seasoning, salt, pepper, minced garlic, chili powder, cumin, and smoked paprika. Toss thoroughly until evenly coated.
- Spread the mixture out on the baking sheet in a single layer, ensuring pieces are not crowded.
- Bake for 15 minutes. Remove pan and stir the veggies. Return to oven and bake for another 10-15 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and veggies are tender and charred.
- Remove from oven and squeeze fresh lime juice over everything. Serve immediately with warm tortillas and desired toppings.
Notes
Do not crowd the pan to ensure roasting instead of steaming. Cut chicken and veggies into uniform sizes for even cooking. Pat chicken dry before seasoning to help it brown. Use smoked paprika for a grilled flavor. Chicken thighs can be substituted but may require slightly longer cooking time.
