Description

Sticky, tangy, and incredibly easy to make, these Brown Sugar Peach Crumble Bars feature a tender base, juicy peach filling, and a caramelized brown sugar crumble topping. They are perfect for summer gatherings and taste even better the next day.


Ingredients

  • 2 cups (250g) all-purpose flour
  • 1 cup (226g) unsalted butter, cold and cubed
  • 1 cup (200g) light brown sugar
  • 1/2 teaspoon salt
  • 34 large peaches (about 1.5 lbs / 680g), peeled and sliced
  • 1/2 cup (100g) granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract (optional)
  • 1/2 cup rolled oats (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, combine flour, brown sugar, and salt. Add cold cubed butter and rub it into the flour mixture with your fingers until it resembles coarse sand with pea-sized lumps.
  3. Remove 1/2 cup of the crumble mixture and set aside for the topping. Press the remaining mixture firmly into the bottom of the prepared baking dish to form the base.
  4. In a medium bowl, toss sliced peaches with granulated sugar, cornstarch, lemon juice, cinnamon, and vanilla (if using) until evenly coated.
  5. Pour the peach mixture over the pressed base and spread evenly. Sprinkle the reserved 1/2 cup crumble mixture loosely over the top.
  6. Bake for 45-50 minutes, or until the topping is golden brown and the peaches are bubbling vigorously. Tent with foil if browning too quickly.
  7. Cool completely on a wire rack for at least 1 hour (preferably 2) before cutting into squares to allow the filling to set.

Notes

Keep butter cold for a crunchy crumble. Do not skip cornstarch as peaches release significant liquid. Bars must cool completely before cutting to prevent falling apart. Store in an airtight container at room temperature for 2 days or in the fridge for 4 days. They do not freeze well.
