Description
Sticky, tangy, and incredibly easy to make, these Brown Sugar Peach Crumble Bars feature a tender base, juicy peach filling, and a caramelized brown sugar crumble topping. They are perfect for summer gatherings and taste even better the next day.
Ingredients
- 2 cups (250g) all-purpose flour
- 1 cup (226g) unsalted butter, cold and cubed
- 1 cup (200g) light brown sugar
- 1/2 teaspoon salt
- 3–4 large peaches (about 1.5 lbs / 680g), peeled and sliced
- 1/2 cup (100g) granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla extract (optional)
- 1/2 cup rolled oats (optional, for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or non-stick spray.
- In a large mixing bowl, combine flour, brown sugar, and salt. Add cold cubed butter and rub it into the flour mixture with your fingers until it resembles coarse sand with pea-sized lumps.
- Remove 1/2 cup of the crumble mixture and set aside for the topping. Press the remaining mixture firmly into the bottom of the prepared baking dish to form the base.
- In a medium bowl, toss sliced peaches with granulated sugar, cornstarch, lemon juice, cinnamon, and vanilla (if using) until evenly coated.
- Pour the peach mixture over the pressed base and spread evenly. Sprinkle the reserved 1/2 cup crumble mixture loosely over the top.
- Bake for 45-50 minutes, or until the topping is golden brown and the peaches are bubbling vigorously. Tent with foil if browning too quickly.
- Cool completely on a wire rack for at least 1 hour (preferably 2) before cutting into squares to allow the filling to set.
Notes
Keep butter cold for a crunchy crumble. Do not skip cornstarch as peaches release significant liquid. Bars must cool completely before cutting to prevent falling apart. Store in an airtight container at room temperature for 2 days or in the fridge for 4 days. They do not freeze well.
