Description
A quick, naturally gluten-free weeknight dinner featuring juicy bone-in pork chops seared in olive oil, finished with a nutty brown butter sauce, fresh sage, and sweet caramelized apples.

- 4 bone-in pork chops (about 1 inch thick)
- 1 tablespoon olive oil
- 4 tablespoons unsalted butter
- 10–12 large fresh sage leaves
- 2 cloves garlic, minced
- Kosher salt and freshly cracked black pepper
- 2 medium firm apples (such as Honeycrisp or Fuji), sliced
- 1 tablespoon honey or maple syrup
- 1/2 cup apple cider or dry white wine
- 1 sprig fresh thyme (optional)
Instructions
- Remove pork chops from the fridge and let them sit at room temperature for 15-20 minutes. Pat dry with paper towels and season generously with salt and pepper.
- Heat a large cast-iron or stainless steel skillet over medium-high heat. Add olive oil and let it get hot but not smoking.
- Sear pork chops for 3-4 minutes on the first side until golden brown. Flip and cook for another 3-4 minutes until internal temperature reaches 140°F. Remove to a plate and tent with foil.
- Reduce heat to medium. Add butter to the same skillet. Melt and watch closely until it turns golden amber and smells nutty (about 2-3 minutes). Do not let it burn.
- Add sliced apples to the brown butter. Toss to coat and sprinkle with salt and honey/maple syrup. Cook for 3-4 minutes until tender and glazed.
- If using apple cider or wine, pour it in now and simmer for 1-2 minutes to reduce slightly.
- Toss in fresh sage leaves and minced garlic. Cook for 30-60 seconds until sage crisps and garlic is fragrant. Remove from heat.
- Return pork chops to the pan, nestling them into the apples and sauce. Spoon sauce over chops and let sit for 1 minute before serving.
Notes
Do not crowd the pan to ensure proper searing. Watch the butter closely as it burns easily. Rest the meat for 5 minutes after searing to redistribute juices. This dish is best enjoyed fresh; freezing is not recommended as the sauce may separate.
