- 1/2 cup (113g) unsalted butter
- 8–10 cloves black garlic
- 1/2 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes
- 12 oz (340g) whole wheat pasta (penne, rigatoni, or fusilli)
- 1 tablespoon salt (for pasta water)
- 4–6 quarts water
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon extra virgin olive oil
Instructions
- Peel black garlic cloves and mash them into a fine paste using a fork.
- In a small saucepan over low heat, melt the butter. Add the black garlic paste, garlic powder, and red pepper flakes. Stir constantly for 2-3 minutes until fragrant but not browned. Remove from heat.
- Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente (8-10 minutes).
- Before draining, reserve 1 cup of pasta water. Drain the pasta.
- Return the hot pasta to the pot or a large serving bowl. Pour the black garlic butter over the pasta and toss immediately to coat.
- If the sauce is too thick, add a splash of the reserved pasta water and toss again until glossy.
- Stir in the grated Parmesan cheese and fresh parsley. Taste and adjust salt if needed.
- Drizzle with extra virgin olive oil and serve immediately.
Notes
Black garlic burns faster than regular garlic due to sugar content, so keep heat low. Save pasta water to help emulsify the sauce. The sauce may separate if frozen; it is best stored in the fridge for up to 3 days. Reheat gently with a splash of milk or water.
