Description

Grab-and-go breakfast cups that taste like apple pie but provide the energy needed for busy mornings. These are easy to make, kid-approved, and perfect for meal prepping.


Ingredients

  • 1 ½ cups milk (whole, almond, or oat)
  • 2 large eggs
  • 2 medium apples (Gala or Fuji), diced
  • ½ cup packed brown sugar
  • 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup Greek yogurt (plain or vanilla)
  • 2 tablespoons butter or coconut oil, melted
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Optional: ½ cup chopped walnuts or pecans
  • Optional: ¼ cup chocolate chips
  • Optional: 1 tablespoon maple syrup

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with silicone liners or grease well with cooking spray.
  2. Wash, core, and dice apples into small, bite-sized pieces (about ½ inch).
  3. In a large bowl, whisk together eggs, milk, melted butter (or coconut oil), Greek yogurt, vanilla extract, and brown sugar until smooth.
  4. Add oats, diced apples, cinnamon, nutmeg, salt, and baking powder to the wet mixture. Stir well to coat all oats.
  5. Let the mixture sit for 5 minutes to allow oats to absorb liquid.
  6. Divide the mixture evenly among the 12 muffin cups, leaving about ½ inch of space at the top.
  7. Bake for 20-22 minutes until tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before storing.

Notes

Use old-fashioned rolled oats for the best texture; quick oats will turn to mush. Let the mixture sit for 5 minutes before baking to ensure soft oats. Cool completely before storing to prevent sogginess. Can be stored in the fridge for up to 4 days or frozen for up to 3 months.
