  • 1 pound jumbo shrimp (peeled, deveined, tails on)
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 tablespoon neutral oil (avocado or light olive oil)
  • ½ cup mayonnaise
  • ¼ cup sriracha
  • ¼ cup sweet chili sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 2 stalks green onions (sliced)
  • 1 tablespoon sesame seeds (toasted)
  • Lemon wedges for serving
  • Salt and pepper to taste

Instructions

  1. Rinse shrimp under cold water and pat completely dry with paper towels. Season lightly with salt and pepper.
  2. Set up a dredging station with three shallow bowls: one with flour, one with whisked eggs (seasoned with salt/pepper), and one with panko breadcrumbs.
  3. Dredge each shrimp in flour, dip in egg wash, then press firmly into panko breadcrumbs to coat. Place on a clean plate.
  4. Preheat air fryer to 400°F (200°C) for 3 minutes. Lightly spray the basket with oil.
  5. Place shrimp in a single layer in the air fryer basket (do not overcrowd). Spray tops lightly with oil.
  6. Cook for 5 minutes, flip shrimp, spray again, and cook for another 3-4 minutes until golden and crispy.
  7. While shrimp cook, whisk together mayonnaise, sriracha, sweet chili sauce, lemon juice, and honey in a mixing bowl. Adjust seasoning to taste.
  8. Transfer cooked shrimp to a large bowl, pour sauce over, and toss gently to coat.
  9. Serve immediately topped with sliced green onions, toasted sesame seeds, and lemon wedges.

Notes

Ensure shrimp are completely dry before coating to achieve crispiness. Do not overcrowd the air fryer basket; cook in batches if necessary. The sauce can be made ahead and stored in the fridge for up to a week. For a lighter version, substitute Greek yogurt for mayonnaise.
