After-School Pizza Pinwheels: 5-Minute Easy Dinner

Description

A quick and easy weeknight dinner or snack made with tortillas, pizza sauce, mozzarella, and pepperoni. These pinwheels are crispy on the outside, gooey on the inside, and ready in just 25 minutes.

  • 46 large flour tortillas (8-inch / 20cm)
  • 1 cup (240g) pizza sauce or marinara
  • 2 cups (200g) shredded mozzarella cheese
  • 100g pepperoni slices
  • 1 teaspoon Italian seasoning
  • 2 tablespoons butter, melted
  • 1/2 teaspoon garlic powder
  • Optional: Shredded Parmesan, red pepper flakes, fresh spinach

Instructions

  1. Preheat oven to 375°F (190°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Lay tortillas flat on a clean surface. If stiff, gently roll over them with a rolling pin to soften.
  3. Spread a thin layer of pizza sauce over each tortilla, leaving a 1/2-inch border around the edges.
  4. Sprinkle shredded mozzarella evenly over the sauce. Add pepperoni slices on top.
  5. Starting from one long edge, tightly roll each tortilla into a log. Pinch the seam closed.
  6. Slice each log into 1-inch thick rounds using a sharp knife or pizza cutter.
  7. Place pinwheels cut-side up on the prepared baking sheet, leaving space between them.
  8. Mix melted butter with garlic powder and Italian seasoning. Brush generously over the tops of the pinwheels.
  9. Bake for 12-15 minutes, rotating the pan halfway through, until tortillas are golden brown and cheese is bubbly.
  10. Let cool for 2-3 minutes before serving to allow them to set.

Notes

Do not overfill the tortillas to prevent bursting. Roll tightly to ensure they hold their shape. Use garlic powder instead of fresh garlic to prevent burning. For crispier results, reheat leftovers in the oven rather than the microwave.
